The Wildest Mango - MANGO BERLINER WEISSE: mixed fermentation beer with mango – 33 cl – 4.2%

A lightly sour, mixed-fermentation beer, slowly matured in our cellar.

Part of our THE WILDEST CAN project.
It undergoes primary fermentation with our native yeast BUNNY (Bologna Unknown Native Naughty Yeast – info here), followed by a period of fermentation/contamination in an open tank in our cellar, where it then rests to refine and mature.

Among the selected grains, we use an unmalted wheat from the Grani Alti (ancient grains from the Tuscan-Emilian Apennines), specifically the Ardito variety.
