The Wildest Can

The Ca’ del Brado project in CANS: wild beers with mixed fermentation, brewed in open vessel, slowly and naturally matured in our cellar, with the collaboration of the fermentative flora naturally present in the environment.

TRADITION AND MODERNITY, TOGETHER

The Wildest Can aims to bring Ca' del Brado's traditional philosophy into the glass — local ingredients, natural acidification with different aromatic and flavor nuances, and the cellar's own signature character — but with a modern and innovative approach: beers with a "gentle" acidity, canned, extremely drinkable, low in alcohol, session beers also featuring botanicals or spices that wink at the world of mixology!

JUST THE WILDEST CAN!

These beers undergo primary fermentation with our native yeast BUNNY (Bologna Unknown Native Naughty Yeast — info here), followed by a period of fermentation/contamination in an open fermenter in the cellar, where they then rest for aging and maturation (from 5 to 7 months).

Among the selected grains, in addition to pale and pilsner malts, we use an unmalted local wheat from the "Filiera Grani Alti" supply chain (ancient grains from the Tuscan-Emilian Apennines), specifically the Ardito variety.
